And the second way to make snails release mud faster is to soak the snails with some chopped chili. It only took about 2 hours for the snails to release the mud. Then, take the snail to wash it with water.
Put snails with crushed lemongrass, lemon leaves, a little salt and a bowl of water in a pot. Add salt so that after boiling the snails, the spices will be absorbed, the food will be more delicious. Then, cover the pot on high heat until the pot of boiling snails comes to a boil, then open the lid and stir well. About 1-2 minutes after the snails are cooked, turn off the heat.
Do not cook for too long because it will make the snails shriveled, tough, indented and broken when stirring will be very difficult. When boiled snails are cooked, cover the lid to keep the heat and remember to keep the snail broth because after eating the snails, drinking a sip of hot boiled water will feel warm and delicious.
How to make delicious snail dipping sauce like outside
Delicious fish sauce: 2 tablespoons
Cooled boiling water: 1 tablespoon
Rice vinegar: 1 tablespoon
Sugar: 3 tablespoons
Ginger, chili, minced garlic
Lemongrass: thinly sliced
Lemon leaves: sliced
Lemon: About 3, can be replaced with kumquat
+ Add sugar, cooled boiled water, ginger, lemongrass, garlic, chili and rice vinegar, lime juice (kumquat) to dissolve, taste sour, sweet.
+ Add fish sauce slowly and mushrooms to taste salty.
Finally, cut the kumquats into thin slices and mix with the above mixture.
